Also I get a worse problem when plugged into Lenovo's dock, where ejecting sets both monitors to x even though the 2nd monitor is plugged into DVI in the dock. It's like Windows is aware there are two monitors but can't detect what their resolutions are supposed to be so it sets them to x or it's just too stupid to check.

I'll check if the same issue happens with Ubuntu to see if Windows is just not smart enough to handle plugging in and unplugging multiple monitors, which is my suspicion.

Windows is detecting the max resolution of the monitors but it is not setting them to that when I dock or undock, and it is not automatically moving windows over from the unplugged 2nd monitor when I boot up even though I can't move the mouse there and Screen Resolution shows there's only one monitor and it's at the correct resolution.

That smells like a Windows bug, not a driver problem, because it detected the correct number of monitors and resolution! It just is not automatically selecting the max resolution nor moving the windows over when it switches. Expand your skills. Get new features first. A subscription to make the most of your time.
